Arugula Peach Salad

It’s finally peach season!!  Admittedly, peach season is one of my favorite things about summer.  I may be going a little peach crazy over here, eating them for snacks, putting them in salads, baking with them, adding them to cocktails…

I can be kind of picky about salads.  Don’t get me wrong, I love a good salad, but so many of them are boring.  This is not one of those boring salads.  Bursting with different flavors and textures, it really is the perfect summer salad.  Best of all, it comes together in less than 10 minutes.

Arugula Peach Salad

7 ounces of arugula

2 peaches

1/4 cup of pecans

3 ounces goat cheese, I prefer herb goat cheese

For the Vinaigrette

3 tablespoons olive oil

1 tablespoon apple cider vinager

1 teaspoon grainy musturd

1/4 teaspoon sea salt

Few cracks of pepper

Slice your peaches into about two-bite segments. In a large bowl put your arugula, pecans, and sliced peaches.  Crumble goat cheese on top.

Make the vinaigrette by putting all ingredients into a small Tupperware container or mason jar, secure with the lid and shake vigorously until all ingredients are mixed, about 15 seconds.

Pour vinaigrette over the arugula mixture and toss until evenly coated.  Serve immediately.

Makes about 3 large salads.

Tip: the vinaigrette will keep in the fridge for about 5 days.  If you don’t want to eat the salad all at once, simple dress the amount of salad you want, and dress the rest of the salad right before you eat it.  No one likes old soggy salad!
