My Aunt Kathleen is my person. She’s the only person I could call and talk for 30 minutes about how my recipe will turn out if I use 64% versus 69% cocoa chocolate.
Growing up, I would visit Kathleen in Miami, Florida for a week over summer break. I’m probably the only person that thought it was a good idea to go to Miami in the middle of July, but I didn’t care because, Kathleen and I would spend a lot of time in the kitchen. One year we made a mango pie (which was amazing!), but many years we perfected the classics, like this chocolate chocolate chip cookie.
I still remember being in Kathleen’s blue and white kitchen and running out of flour. We made the trek to the grocery and came back to make these cookies. Definitely worth venturing out in the Miami heat for.
Kathleen, thank you for this recipe! I increased the amount of cocoa, used dark chocolate, instead of milk chocolate chips, added vanilla extract, and topped them with flaky sea salt. Change can’t be that bad, right?
Chocolate Chocolate Chip Cookies with Sea Salt
1 cup butter, softened
1 cup sugar
1/2 cup brown sugar
1 egg
1 teaspoon vanilla extract
1/2 cup cocoa
2 tablespoons milk
1 3/4 cups flour
1/4 teaspoon baking soda
1/2 teaspoon sea salt + more for sprinkling on top of cookies
1 1/2 cup dark chocolate chips
In a stand mixer on medium speed, cream together butter and sugars until fluffy, about 3 minutes. Stop mixer, scrap down sides of the bowl and add the egg and vanilla. Beat on medium-low until incorporated, about 30 seconds. Stop mixer, scrap down sides of the bowl and add cocoa and milk. Beat on medium-low until incorporated, about 30 more seconds. Add flour, soda, and salt, beat on low until incorporated, about 1 minute.
Mix in chocolate chips by hand.
With a 2 tablespoon cookie scoop, scoop cookies onto a cookie sheet about 2 inches apart. Sprinkle each cookie with a pinch of sea salt.
Bake at 350 degrees for 13-16 minutes.
Makes about 2 1/2 dozen cookies.
