I have a confession. I’m a vegetarian. I know what you’re thinking… But Gretchen, there are shrimp recipes on The Thompson Kitchen! I know, I know. But here’s the thing, Rich isn’t a vegetarian. Because of this, most of what I cook is vegetarian, and Rich will either eat the vegetarian version, or we’ll add some fish or meat to it.
This is why this baked foil packet salmon is so wonderful. It couldn’t be easier. Throw a piece of salmon in a piece of foil. Add olive oil and some seasoning and viola! Rich is happy, I’m happy, what more could we want?
Baked Foil Packet Salmon
1 salmon filet, about 1/3 lb.
1 teaspoon olive oil
1/4 teaspoon sea salt
1/4 teaspoon fresh cracked pepper
1 garlic clove, minced
few slices of lemon
Preheat oven to 425 degrees.
Mince the garlic clove.
Tear off a piece of foil about 3 time as long as the salmon. Put the salmon in the middle of the foil. Drizzle salmon with olive oil, and top with garlic, salt, pepper, and lemon slices. Fold foil into a lose packet, so the salmon has room to steam. Put packet on a small pan. Put pan with salmon packet in the oven and cook for 18-22 minutes. When it’s done, the salmon should be pink, but not raw.
Plate the salmon and enjoy!
