I like to think I’m a bit of a veggie burger connoisseur. I’ve ordered countless ones at restaurants over the years and tried even more recipes. It’s amazing how many bad veggie burgers there are out there! Many of the ones I’ve made have been the wrong texture or bland, until these.
These are hands down the best veggie burgers I’ve ever made. They’re flavorful, hearty, and the perfect texture. Dare I say these will even satisfy the carnivores in your life? Perfect for your next cookout or an easy weeknight dinner!
Black Bean Veggie Burgers with Cilantro and Jalapeño:
- 1 15 ounce can black beans, rinsed and drained
- 1/4 cup walnuts
- 1/2 cup oatmeal
- 2 cloves garlic, minced
- 1/2 medium red onion, diced
- 1/4 – 1/2 medium jalapeño, depending on heat and preference
- Juice of 1/2 lime
- 1 tablespoon soy sauce
- 1/2 teaspoon salt
- 1/3 cup cilantro, washed with stems trimmed and chopped
- 3 buns
- Optional toppings: avocado, sliced red onion, tomato, cheese, etc.
Method:
In a food processor pulse walnuts, oatmeal, garlic, red onion, jalapeño, and cilantro until minced. Add lime juice, soy sauce, salt and about 3/4 of the black beans. Pulse again until well blended. Fold in the rest of the black beans with a spatula (this gives a nice texture). Let the mixture sit for 5-10 minutes to allow the oatmeal to soak up some of the moisture.
Divide the mixture into three portions and shape each portion into a patty about 3/4 inch thick. Put about a tablespoon of vegetable oil in the bottom of a cast iron skillet and turn on medium heat. Cook each veggie burger for about 5 minutes on each side, or until they start to brown.
Serve immediately with toppings of choice and bun if desired. I like mine without a bun and with smashed avocado and thinly sliced red onion on top, Rich likes his with a bun and all the toppings.
