A few years ago I was at Market 65 in downtown Columbus and grabbed one of their homemade granola bars on a whim. It was SO delicious – full of oatmeal, nuts, seeds, and dried fruit. I went back the next day to buy one for an afternoon snack and stopped when I realized they were $4 a bar. $4 a bar!! I decided then and there that I would try to recreate them at home to avoid spending more on granola bars every week than coffee.
This recipe is a result of A LOT of trial and error – especially on the amount of nut butter and honey used to bind them. Outside the proportions, they’re extremely adaptable. Use whatever nuts/seed/dried fruits you like. Even add in some chocolate chips! Plus you can use whatever nut butter or combination of nut butters you like. I hope you like them as much as we do!
No Bake Granola Bars:
- 2 1/2 cups old fashioned rolled oats
- 1 1/2 cups nuts/seeds/dried fruit of choice
- 1/2 teaspoon cinnamon
- 1/4 teaspoon sea salt + more for on top
- 1 cup nut butter
- 1/2 cup honey
Method:
Line an 8×8 inch pan with parchment paper, set aside.
In a large bowl mix oats, nuts/seeds/dried fruit, cinnamon, and 1/4 teaspoon sea salt. In a microwave safe medium bowl put nut butter and honey. Microwave for 30 seconds to slightly melt the nut butter and honey. Stir and pour over oatmeal mixture. Stir until combined.
Press mixture into the lined pan. Sprinkle the top with a pinch of sea salt. Let sit for 2 hours. Use the parchment paper to pull the bars out of the pan. Cut into desired size bars – I cut them into 16 bars. Either individually wrap the bars for easy grab and go or keep in an airtight container. Enjoy!

- Peanut butter, peanuts, almonds, and dried cherries
- Tahini, peanut butter, peanuts, almonds, and walnuts (combo pictured)
- Peanut butter, peanuts, and chocolate chips
- Tahini, peanut butter, coconut, pistachios, almonds, and dried apricots
- Almond butter, pecans, dried cherries, and chocolate chips
