Happy Friday! I hope everyone is having a great week – it’s finally warmer and sunny in Columbus so we’ve been taking full advantage! I’ve been cooking and drinking some great things lately, many of which haven’t made the blog, so I thought I would share. I hope it inspires something delicious for you this weekend!
Cacio e Pepe. Like I talked about in the last Friday Roundup, Rich and I have been watching Stanley Tucci’s new show “Searching for Italy.” The Rome episode inspired me to make cacio e pepe, spaghetti with a mix of grated pecorino and parmesan and lots of fresh cracked pepper. The secret is to add the cheese slowly and add reserved pasta water. It’s so easy and crazy delicious!
Aperol Spritz. Since it’s been nicer here, I made Rich and I each an Aperol Spritz last Friday to drink while we took Guy for a stroller walk. A walking happy hour – the perfect post work, pre-dinner activity! Plus, an Aperol Spritz tastes like summer.
Birthday. Today’s my mom’s birthday – happy birthday mom! So we’re making it festive with Casey’s famous caramelized onion dip, sushi, great wine, and birthday cake.
Affordable Wine. We’ve had some good wine recently, but we also rediscovered some old favorites – both of which are around $20 a bottle but taste more expensive! Revelry Vintners 2017 Cabernet and Lucien Albrecht Brut Rose. Watch out for more wine content coming soon to The Thompson Kitchen!
Black Bean Veggie Burgers. I made my black bean veggie burgers for dinner last week with a side of roasted sweet potato fries. I don’t make them as much in the winter, so I forgot how delicious they are! The perfect weeknight dinner.
