I call these “weekday” chocolate peanut butter crispy bars because they’re a little better for you than normal ones. Perfect for when you want to make a quick dessert or snack, but don’t want to make a whole batch of cookies or brownies. I know – do those times really exist??
I love to keep them in the fridge when I know I’m going to have a busy week because they’re great for those times when you need something quick and filling to eat. But you could just as easily take them to a friends house for dessert because who doesn’t love chocolate and peanut butter? Truly a perfect treat!
Weekday Chocolate Peanut Butter Crispy Bars
- 1 cup natural peanut butter
- 1/2 cup real maple syrup
- 2 1/2 cups puffed rice cereal (like Rice Krispies)
- 1 teaspoon vanilla
- 1/4 teaspoon sea salt
- 1 cup dark chocolate chips
- 1 teaspoon coconut oil
- Flaky sea salt
Line an 8×8 inch pan with parchment paper.
In a medium microwave safe bowl put the peanut butter and maple syrup. Microwave for 30 seconds. Stir in salt and vanilla. Stir in puffed rice cereal. Pour into prepared pan and gently flatten.
In a small microwave safe bowl put chocolate chips and coconut oil. Heat in the microwave for 30 second increments until melted. Spread in an even layer over peanut butter crispy mixture. Sprinkle with flaky sea salt.
Chill for 40 – 50 minutes until chocolate is firm, but not hard. Cut into 16 squares.
Enjoy!
These keep in an air tight container in the fridge for a week, but I doubt they’ll last that long!
Tips:
If possible you want to cut the bars before the chocolate is completely hard because they will cut more cleanly. If you can’t cut them in time, no worries! The chocolate will just crack a bit.

- Using a sharp knife and the proper chill time are the two keys to getting clean cuts on these. I swear by this chef’s knife.
